Ingredients

  • 50 g almond flour
  • 65 g powdered sugar
  • 10 g sugar
  • 36 g egg white L
  • purple food coloring powder or paste
  • 100 g white chocolate
  • 30 g cream
  • 1-2 teaspoons of purple yam syrup / a few drops of Ubeness

Instructions

  • Beat egg whites with sugar until very stiff.
  • Mix the almond flour and powdered sugar and sift.
  • Fold the almond-sugar mixture into the egg mixture and add food coloring.
  • Carefully use a piping nozzle to pipe round piles onto a tray. Let it dry.
  • Bake at 130°C for about 15 minutes. Let cool down.
  • Melt the cream and white chocolate and mix well. Add purple yam syrup. Let cool down.
  • Fill into piping bags. Take two macarons of the same size, pipe a large pile of ganache on one, and press them together with the other.
  • Enjoy.
